It just hit me...

Today Sarah turns 5.  I'm 35 weeks on Friday. It hit me yesterday that is is completely feasible that today could be "the day" and my daughters could share a birthday.  I don't want them to.  Jonnie is out of the country for work, and I don't have the leave time to support her coming this early, but it is a total possibility...

First day of School Printables.

That time of year again.  First day of school pictures are upon us. In looking for first day of school signs, I have round up 4 different ones (and a post on another blog who rounded a few up).  I thought would be easier to share in a blog than making a facebook post with each individual site.

Last year, Jonathan was looking for first day of school signs, at the 11th hour as per our usual.  He stumbled across Jones Creek Creations and these Chalkboard signs (insert proud mommy picture).

I thought they were adorable and was totally prepared to use them again.  So I approached Dr. Google.  Then it hit me, there are so many options for back to school signs.

Here in Oviedo, I have Sarah signed up for Pre-K at Noah's school.  It is definitely fun for the both of them and something they are both looking forward to.  They loved attending the same school in Texas, and when Noah transitioned to Kindergarten, Sarah was lost.  Long story short, last night I signed Sarah up for a lunch account and when I did so, I found a link on My School Bucks for First Day of School signs.  These include the school year...


I cannot wait to see the smiling faces (parents included) over the next month as our mini-mes head back to school!

New Year!

Normally a new year means excitement for what is to come for me...  This year has me BLUE.  As we got home last night Jonathan joked that since we are staying in today, he should spend it packing his bags.  He took a job a few months back in Florida and while we hoped the house would sell quickly(but knew it was realistically a bad time of year), it hasn't.  Which means the kids and I are here WAITING for the house to sell while he has "moved" to Florida.  So Sunday, when the holidays are done, and the kids are getting ready to go back to school, Jonnie will be leaving to go to work and I don't know when he will be back to visit.  It is such a transition for our family.  We miss him terribly.  I hate when he leaves, but I normally have an end date for when he will be back.  A time, I can make a countdown for the kids to look forward to.  This time, I do not.

The worst part is, over the last week and a half, our house has been full of love and family.  My in-laws came to visit as well so its been nice having everyone here.  Sunday evening, we drive to the airport with a carload of 6, and leave just the 3 of us.  It is hard enough for me, but seeing how it will affect the kids, hurts me too.  I'm scared of their reaction, as well as my own.

In typical Hilliary fashion, once the realization hit me.  I became a moody mess.  I don't want to be around anyone, I want to be alone...  I don't want to hang out or do anything that anyone else wants to do, I just want to be blah (picture Sadness from Inside Out).  I hate my coping mechanisms because I hate that people take it personally.  I hate that people think it is them I'm upset with (I mean really, if you did nothing to me, why would I be upset with you).  It is really nothing personal, it is just me being sad, and moody because I'm about to feel abandoned.  I don't like it, but its my truth.  I hope this house sells quickly now that the market should start picking up,  we need to be together, not apart.

Out with the Old...

So I obviously did not keep up my daily blog.  I did not even make it weekly or monthly for that matter.  I found several topics I started, but never finished...  That is fine, I am going to start more often though.  I logged on here to get my fudge recipe and then realized that I can use this site for so much more.  So I'm planning a remodel and revisit.  I am going to start blogging about my Wildtree business and the  products we offer.  As well, I'm going to start reviewing places we have been and things we have tried.  For example, in the last month we have been on 2 Carnival cruises that I would love to share my opinion on and it will be coming.  Just need to finish my Teacher certification CPE hours and renew my certification first.

So much to come so exciting.

Revamp for 2014

So I have decided that I am going to start blogging daily.  It may be weird sometimes as I search for topics, but it is going to happen.  Today will be easy enough because it is the first post I'll share what has been going on.

I am in the process of building a stuffed animal "cage" for Noah's toys.  I will post a step-by-step blog detailing the build process for those interested.  As well, I am debating a business venture to generate some income, more to come as that progresses.  And I am picking up the coupons again in order to save us some money (I can refer you to someone who teaches a class and runs a private group that I use).  I will be finishing the furniture for Noah's "big boy room" and painting the room in the coming weeks.  I am organizing the house and preparing myself for big lifestyle changes that I will talk about also.

2014 is the year my life will change.  I have high hopes and expectations for myself and my family.  I am going to be more vigilant with my household duties to prevent the stresses that frustrate me so.

For now, I need to log off and pack the kids lunches and get them up and ready for school today.

Kale Chips

Kale completely surprised me in that it tasted very much like broccoli, therefore I found these
very enjoyable.

Kale
Olive Oil
Salt

Preheat oven to 275.  Remove leaves from stems and wash.  Drizzle leaves with olive oil and sprinkle with salt.  Toss until all leaves are coated.  Spread on baking pan and bake for 15 minutes.  Flip leaves and bake for another 15 minutes or until completely crispy.

Easy Thai Chicken

This recipe is an adapted version of a recipe found here: http://www.successrice.com/en-us/recipes/3321/easythaichickenandrice.aspx

1.5 lbs chicken breast, cut in small pieces
garlic powder (optional)
onion powder (optional)
black pepper (optional)
1 cup coconut milk
1Tbsp Thai red curry
2 tsp brown sugar packed firmly
1 tsp lime juice
1/4 tsp salt
1 bag frozen Asian style vegetables (16 oz), thawed
1/2 cup peanuts (optional)

Combine coconut milk, curry, brown sugar, lime juice, and salt.  Set aside.

Sprinkle garlic powder, onion powder, and pepper lightly on cut up chicken and mix together.

Saute chicken until cooked through.  Mix in vegetables and add curry sauce. Cook until thoroughly heated.

Serve over rice and top with the peanuts.

Feeling better

All I needed was a day with an adult. It started with dropping Noah off to play while I went to a dentist appointment. Of course, they need consent to treat forms from Dr. Wiley. Why could no one tell me this before? UGH. Needless to say it was a quick appointment and I was back with Noah in 45 minutes. He didn't even miss me and that made me feel fantastic!

After I got back, we decided to take the boys to the zoo. It was TERRIFIC! I needed a day of interaction with an adult. It was a refresh for my soul. Funny think about it is, now I feel like doing housework, making dinner, and being the doting mommy/wife I normally tend to be. What a silly thing to realize that just 1 day can make such a difference in my mind, body, and soul... I need to do this more often.

Overwhelmed

Yup that is me, completely and utterly overwhelmed. I need my husband's support and I don't feel it. He is always busy with work and when he is home in the evenings I need to ask for help. Hello, I'm 25w 5d pregnant. I'm tired. I have an 18 month old who relies on mommy, its exhausting. I shouldn't have to ask for help you should offer some relief. Especially when you get to leave and go out of town and I am home to handle EVERYTHING. How many times in the last month have you done anything in the house without being pestered to do it? Dishes? Vacuum? Picking up/Organizing?

Our beautiful little girl is due in 14-ish weeks and I'm carrying the bag as always. We talk about it, you don't listen. I beg for it, I feel like you don't care.

To make matters worse, I feel completely and utterly friendless. I know I have friends who are busy with their families, however I need adults to talk to and interact with. A girls night out (or in) to play games, talk and unwind. I need to re-energize and I am just plain tapped out. I have Noah who clings on me for EVERYTHING and a husband whose idea of helping me is waiting until I beg for assistance (and even then its pulling teeth).

There isn't a lot that needs doing... We need to clean out our closet, bathroom, and bedroom to make room for baby. We need big boy furniture for Noah. We need to clear the dining room and clean up the kitchen. There are little messes in between (like my desk int eh living room), but they are not something that will take time and dedication. I beg you to help me get these areas to a sustainable and reasonable level of clean so I can run through the house with a vacuum, duster, and scrubbing a few items once a week and have it all done. Instead, more stuff is piled into the dining room making more work for me. I am tired of weekends upon weekends of putting shit off just because and it taking months or me to handle it all because I am the only one involved. It angers and depresses me. It makes me honestly want to cry.

I feel bad... I unnecessarily picked on my Jonnie. He was my focus of my overwhelming sensation only because he was readily available. Yes I need his help and yes I would appreciate more assistance, but I really should not blame him when all I really need is some adult interaction!

Things always change

So, last week I am told that I have 2 wonderful friends who want to throw me a baby shower (thanks Cheri and Tiffany) and this week I start getting so much accomplished that I am 2 weeks ahead on my to-do list.

Noah's room has now been converted to a big boy room. His crib is now set up as a toddler bed, his furniture is anchored, and all the stuff we stored in the room is ready to transition elsewhere. The dining room is mostly cleared of the stuff it has been storing and should be emptied next weekend after I get the donations out of our closet. Next week will bring a trip to goodwill and possibly the dump or all my boxes awaiting recycling. It feels good to get the house cleared out. It feels terrific that our little girl is closer to coming into an organized home. I am loving this.

Speaking of baby girl, she is an active little baby. I love feeling her kick and watching my whole belly move when she is excited. Noah seems to love his little sister to, but its hard to know. He definitely enjoys laying against her and feeling her kick his back and head, lol. He is going to make an awesome big brother. I feel so lucky and blessed with the family I have. I love my life (most of the time) and am excitedly waiting the 15 weeks until baby girl's due date making our family of 3 a family of 4.

New Baby

As the weeks tick by I know we are closer and closer to having our baby girl. This time I want to do a few things differently. A big one is that I want to get into baby wearing. Not that I did not want to wear Noah, I just didn't need to. I had both arms available for him. With 2 little ones, I won't be as lucky (unless having a second baby means I automatically sprout a second set of arms). In deciding to baby wear, I think I want to make my one ring sling and wrap. It will give me flexibility to have the stroller or grocery cart for Noah while I am "carrying" my little girl. Plus it will make breastfeeding on the go easier.

There are a million projects to work on in our house right now, and I am fixated on baby wearing devices. Hopefully we can get Noah's room "secured" this weekend. He is so big that it is time to convert his crib to a toddler bed.

We also get to clean out mommy and daddy's room and closet to make room for our little girl and to store their bigger clothes. Finish clearing out the dining room, move the eat-in play yard gate, and just clean out the house in general... so much to do and all I can focus on is the wraps/slings. I need help, lol!

Easy Fudge

So, I love to make fudge for the holidays. Its easy, people enjoy it, and if I can give it away so there isn't too much in the house for me to eat!

Here is the recipe I follow (from Nestle Tollhouse) with my personal variations.

Fudge

Ingredients

1 1/2 cups granulated sugar
2/3 cup (5 fl.-oz. can) Evaporated Milk
2 tablespoons butter or margarine
1/4 teaspoon salt
2 cups miniature marshmallows
1 1/2 cups (9 oz.) Baking Chips
1 teaspoon vanilla extract

Directions

Line 8-inch-square baking pan with foil or wax paper

COMBINE sugar, evaporated milk, butter and salt in medium, heavy-duty saucepan. Bring to a full rolling boil over medium heat, stirring constantly. Boil, stirring constantly, for 4 to 5 minutes. Remove from heat.

STIR in marshmallows, morsels, nuts and vanilla extract. Stir vigorously for 1 minute or until marshmallows are melted. Pour into prepared baking pan; refrigerate for 2 hours or until firm. Lift from pan; remove foil.

My Variations

I never take the pan off the heat before adding chips, marshmallows, etc, I simply turn the pan to low. If you take it off the heat, you may have to put it back on to melt what won’t melt. There are so many ways you can change this up to get the flavor you want. It is super easy to change it, which is why this is my FAVORITE recipe to follow.

Milk Chocolate (self-explanatory)

Use 1 ½ cups of milk chocolate chips

Milk Chocolate Pecan

Use 1 ½ cups of milk chocolate chips and ½ cup of pecans (or other preferred nut)

White Chocolate (again, self-explanatory)

Use 1 ½ cups of white chocolate chips

White Chocolate Peppermint

Use 1 ½ cups of white chocolate chips, and substitute 2 tsp of peppermint extract for the vanilla extract. Also, I crushed 3 candy canes and mixed half in and topped with the other half. For another variation, I have made this recipe with semi-sweet chips before if you prefer to the white chocolate and I noticed this year that Andes now sells their mints chopped up for baking, but I haven’t tried that yet.

Peanut butter Chocolate

This one is easier than the triple layer. I split everything down the middle. And combine separately then I layer it in the pan.

Layer 1 (chocolate)

3/4 cups granulated sugar
1/3 cup Evaporated Milk
1 tablespoons butter or margarine
1/8 teaspoon salt
1 cup marshmallows
¾ cup semi-sweet chocolate chips
½ tsp vanilla
Prepare as instructed and place in bottom of pan.

Layer 2 (Peanut Butter)

3/4 cups granulated sugar
1/3 cup Evaporated Milk
1 tablespoons butter or margarine
1/8 teaspoon salt
1 cups miniature marshmallows
3/4 cup Reeses peanut butter chips
1/2 teaspoon vanilla extract

Prepare as before and layer on top of chocolate.

You can also make a straight up peanut butter fudge by using peanut butter chips, or if you don’t care if the chocolate and peanut butter is layered or mixed you can buy premixed peanut butter and chocolate chips (or mix them yourself).

Triple Chocolate

This one is slightly more difficult to describe. I split every ingredient in thirds, or you can make a half batch of each flavor which would be easier to split. I could only do this one because of my kitchen scale.

Layer 1 (Semi-sweet)

1/2 cup granulated sugar
1.67 fl.-oz. Evaporated Milk
2/3 tablespoons butter or margarine
Pinch of salt
2/3 cups miniature marshmallows
1/2 cups Semi-sweet chips
1/3 teaspoon vanilla extract

Layer 2 (White Chocolate)

1/2 cup granulated sugar
1.67 fl.-oz. Evaporated Milk
2/3 tablespoons butter or margarine
Pinch of salt
2/3 cups miniature marshmallows
1/2 cups white chocolate chips
1/3 teaspoon vanilla extract

Layer 3 (Milk Chocolate)

1/2 cup granulated sugar
1.67 fl.-oz. Evaporated Milk
2/3 tablespoons butter or margarine
Pinch of salt
2/3 cups miniature marshmallows
1/2 cups milk chocolate chips
1/3 teaspoon vanilla extract

Prepare each layer as instructed and layer each of them.

I think I would have preferred this one with dark chocolate chips. Just me though. I wasn’t using dark chocolate for anything else though so I didn’t have any.

Mommy blues

I don't know what is going on, but I have this attitude I cannot shake since last night. I wouldn't doubt if it is because I am exhausted, but I don't like it one bit.

I jumped all over my wonderful husband for the simplest things. While I'm not jumping on Noah and still being the mommy he knows I don't feel like doing it. Just hanging laundry, loading the dryer, and starting a new load of laundry left me feeling out of breath. I still need to finish organizing the dining room, clean out Noah's room, and make a plan of attack for getting the house cleaned up this week (when we went out of town, we left it looking ransacked and I have yet to start picking it up).

I need to organize coupons, peruse shopping ads, couponing websites, and make shopping plans for our groceries this week. It is equally frustrating that lockheed's email isn't cooperating so that I cannot get in touch with Jonnie easily. ARGH!

At least I am starting to wake up some.

Spaghetti Squash

So its been like 3.5 months since I have posted, geez life can get busy!

In honor of a facebook friend and my desire to eat healthier, I'm posting a recipe for one of my favorite veggie loaded favorites. I do not make it exactly the same every time simply because sometimes add different vegetables entice me (like today I added carrots to my usual mix) but in all its a favorite for me, so here it goes, this is the recipe as I made it today. Also, if you make a BIG batch, leftovers defrost and reheat well!


Spaghetti Squash


1 medium-large spaghetti squash
1/2 jar of Prego smooth and simple (Today I substituted with some of papa johns pizza sauce)
1 medium zucchini
1 medium yellow squash
1/2 pack on mushrooms
1/2 medium onion
1/2 green pepper
1/4 package of premium carrots
Garlic powder (or chopped garlic)
1 lb ground turkey (optional)
Colby Jack or other favorite cheese (optional)

1) Dice onions, green pepper, mushrooms, zucchini, yellow squash, and carrots into desired size (tip: cut carrots a bit thinner to allow them to cook quickly).

2) Cut spaghetti squash in half lengthwise, and scoop out strings and seeds. Place face down in a microwave safe container, add 1/4 cup of water, cover with plastic wrap and steam in microwave for 10 minutes.

3) Brown ground turkey with onions, green peppers, mushrooms, and garlic powder until thoroughly cooked. Set aside. In heated pan place carrots, zucchini, and yellow squash, lightly saute for about 1 minute, then turn down heat, cover, and allow them to steam (no added liquid) until thoroughly cooked (approx 5 minutes).

4) The spaghetti squash should be cool enough to handle now. While the zucchini mixture is steaming, use a fork to rake out the strands of the spaghetti squash.
5) Once the zucchini, yellow squash, and carrots are done, mix the turkey mixture and squash mixture in pan and add desired amount of tomato sauce. (If making without turkey: saute onion, green pepper and mushroom then set aside while completing the carrot, zucchini, and yellow squash and mix together when done.) Allow to simmer until warmed and season as desired (I like to add a little crushed red pepper).

6) Once sauce is done, pour in your strands of spaghetti squash and mix it all together (mine resembles a thick chili until scooped out). Serve topped with cheese (if desired).

First appointment

Yesterday we had our first appointment with Dr. Wiley. She was out of the office dealing with a delivery at the hospital, so Joe performed a sonogram. While we waited for him, Dr. Wiley came back and was so excited to see us.

Well, Joe makes me nervous. I had a partial molar pregnancy a few years back and Joe was the one who found it. Let me tell you, it was very relaxing when Joe found our little Embry with an abdominal u/s and it measured 7w 3d making the due date May 11, 2011. Embry's little heart was beating at 143 bpm and we are so excited. Noah did very well considering we were at the office for 3 hours, but I think he needs a babysitter in the future!

Embry 4

Two weeks ago on September 2, 2011, we found out that we are indeed expecting another baby. It is a very exciting time and we are praying that this little one sticks and stays in our lives for a very long time. Noah will be a fabulous big brother.

We started in the nervous side and went in for multiple blood tests until finally being given a progesterone supplement. If this little one keeps growing inside me then the due date should be May 13, 2011 on Mother's Day. It seems so long away but so close at the same time. We plan to tell family after the 1st appointment on September 26th where we will hopefully see Embry's little heart beating away. After that we will make the Facebook announcement after the first trimester is over on Halloween.

It is just a very exciting time when our family is growing! The only hope is that next school year I will find a job so that we can afford things we need like a larger vehicle.

Busy busy busy

Noah went to the doctor yesterday to get his flu shot. He cried from the moment the needle went in until I was buttoning his romper. Then it was as if nothing happened and he was happy as always. He is such a big boy.

His ever changing personality amazes me. A new favorite is walking to the mail box. Once we get there, he turns around and runs up on the lawn. He loves talking with his toys and rearranging everything.

Today I have been looking at job openings and day-care centers. I need to find something to get me out of the house and making some money. Having this time with Noah has been fantastic, and I wouldn't trade it for the world. I will definitely miss it with future children, but you do what you have to. We cannot afford more children if I do not find work.

Day 3

SO I have made it 3 days in my attempts to not post on Facebook. Doing good, and I am quickly finding that my desire to even load Facebook is getting less and less. I mean I've only looked once in the last 24 hours, aside from our closed group of intactivists that is.

Noah is so big, He is learning to consistently kick his ball and cars, trying to climb on toys to reach doorknobs, and snacking on so many things. He had a grilled cheese sandwich for lunch and ate the whole thing. The night was hard he woke up 2 hours into being in bed screaming for someone to get him. After a few minutes I went to pick him up only to find out he had a mystery diaper rash that hadn't existed before he went to bed. It took a while to get him to not make me carry him around. When he finally went to play and spent 2 hours awake. Poor little boy just wanted to see his daddy.

BIG boy

For the first time ever, Noah knocked with a closed fist. The lawn guys were cutting the backyard and Noah went to the window and started knocking to get attention. He also showed how much he loves Disney's poetry shorts. He was looking out at the backyard and the intro music came up. As soon as he heard it, he came running around the sofa clapping. He has a knack for climbing and loves to climb on the chairs when I am sitting in them.

He is growing up so quickly, I don't know what I will do with myself.

Dentist

Noah's dentist appointment went VERY well. I like his dentist very much. Noah got his teeth counted and brushed. They all look healthy and Noah even got a Thomas the train sticker!

Noah is a fantastic little handful. His new gripe, not wanting to ride in his car seat. What can I do if he wants to be free? He has to toughen up and deal, because I am not going to let my 12 (nearly 13) month old tell me how to do things!

All in all it is fun watching my little man grow up way too quickly!
